The 2019 IOC Academy brought together more than 320 winemakers

The IOC Academy: “The Balance of the Living” is a series of technical conferences held in the largest French vineyards. The objective of this biennial event is to promote the exchange of knowledge and practical/scientific ideas to advance oenological practices, with the aim of adapting to, in particular, new environmental or societal challenges.

Two years ago, at the previous edition of the IOC Academy, the IOC group brought together researchers and practitioners around a new oenological concept, pre-fermentation bioprotection, and alternate approaches to reduce sulphite content in wines, in the face of climate change. This environment and the challenges it represents are more relevant than ever. Microbiological risks and vulnerability to oxidation remain at the heart of winemakers’ concerns.

Today, the project is far from over and research has progressed. Bioprotection extends to other stages of winemaking, to other microorganisms, based on the complex dynamics of a multitude of flora. In this second edition of the IOC Academy, we proposed a discussion on these concepts with technical interventions, and experts shedding light on the latest advances in practical research.

In 2019, the IOC Academy took place in 4 different cities of France, from June 18th to June 21st, 2019, bringing together more than 320 winemakers and wine technicians. The event was once again a success.

We would like to thank the external speakers: Vincent Gerbaux (IFV), Virginie Serpaggi (Inter Rhône), Philippe Gabillot (French Chamber of Agriculture), Fabien Ozanne (Dioenos Rhône), Patricia Ballestra (ISVV), as well as the IOC / Lallemand team: Nathalie SIECZKOWSKI (Group R&D), Jean-Pierre Valade (IOC Technical Support), and Olivier Pillet (IOC R&D), for their professionalism and the quality of their interventions.
