Lallemand Oenology holds a MasterClass at the Institute of Masters of Wine, in London
Right before lockdown, Lallemand Oenology held a masterclass in London at the Institute of Masters of wine on March 11th, entitled “State of flux: microbiological solutions to making wine in an uncertain climate”.
Indeed the impact of climate change and extreme weather events on wine has been studied for around 15 years. Some of its most visible impacts are higher alcohol levels, low acidity, wines losing longevity and freshness as a consequence. This seminar intended to consider various microbiological strategies to mitigate these impacts and also other effects of climate change.
The speakers to this masterclass were Paul Zeiss and Ann Dumont, both from Lallemand and 2 Masters of Wine and also consultants for us: Sam Harrop and Dirceu Vianna Junior.
At the end of the presentations, wine tasting was organized emphasizing how our winemaking products (wine yeast, wine bacteria, wine specific inactivated yeast…) can help mitigate the risks associated with climate change when producing wine. The tasting showed pretty spectacular differences among the wines that we will be pleased to share very soon.
